    Mushroom And Ricotta Quiche
    You're probably already familiar with quiche recipes. Quiche is the perfect make-ahead dish for company, whether it's for brunches, lunches or dinners. This ricotta and mushroom quiche is delicious and easy to prepare!
    Ingredients
    1. Frozen shortcrust pastry 2 sheets
    2. Ricotta 240g
    3. Parmesan 25g
    4. Button mushrooms 200g
    5. Swiss brown mushrooms 200g
    6. Eggs 3
    7. Olive oil 1 tbsp
    8. Butter 50g
    9. Onion 1
    10. Garlic 2 cloves
    11. Flat-leaf parsley 1/2 cup
    12. Nutmeg 1 pinch
    13. Salt to taste
    14. Pepper to taste

    Instructions
    1. Preheat the oven to 350ºF.
    2. Melt butter in a large skillet over medium-high heat.
    3. Saute the mushrooms, onions and garlic together.
    4. Stir in seasonings and cook for 2 minutes until liquid is evaporated.
    5. Let cool for 5 minutes.
    6. In a large bowl, beat eggs; add salt, pepper, nutmeg and grated parmesan cheese and stir well.
    7. Add the ricotta cheese and thickly sliced mushrooms, mix gently.
    8. Place the shortcrust in a 9 inch oven pan.
    9. Pour the mixture into the crust and fold the edges.
    10. Place into the preheated oven and bake for 40-50 minutes.

    Take your time to prepare a beef stew – it will take quite long (be patient!) but the result is definitely worth the effort. Minutes into cooking, you will smell the delicious meat with vegetables and soon all the members of your family will gather in the kitchen waiting for the dinner to be ready.
    Ingredients
    1. Beef 2 lb
    2. Flour 2 tbsp
    3. Olive oil
    4. Garlic cloves 2
    5. Stemmed celery 2
    6. Carrots 4
    7. Thyme
    8. Tomatoes 4
    9. Red wine ¾ cup
    10. Beef broth 500 ml
    11. Bay leaves 2
    12. Worcester sauce
    13. Salt
    14. Pepper
    15. Onion 1

    Instructions
    1. Heat the oven to 320°F.
    2. Peel the onion, carrots and garlic cloves. Slice the carrots, chop the onion and the garlic, coarsely chop the celery.
    3. Dice the meat, roll it in flour and leave it for a while.
    4. Fry the meat in a big stew-pan with some olive oil for 5 minutes until it gets a brown crust. Put the meat into a bowl.
    5. Pour some more oil into the pan and fry the vegetables with thyme for 10-15 minutes until they are soft.
    6. Put the meat back into the stew-pan and add peeled and sliced tomatoes and wine. Wait for a few minutes and pour the broth (or water), bay leaves and some worcester sauce.
    7. Add some salt and pepper and leave the mixture in the oven for 3-4 hours. The meat should become very soft.
    8. Serve the stew with mashed potatoes. A glass of red wine will also pair with it perfectly!

    7. Parmesan cheese 2 tbsp
    8. Fresh bread crumbs 4 tbsp
    9. Canned peeled tomatoes 1 lb
    10. Cream 100 ml
    11. Salt
    12. Pepper

    Instructions
    1. Mince an onion, parsley and garlic. Beat an egg. Put the minced meat in a bowl and mix it with onions, garlic, parsley, bread crumbs, parmesan, oregano and an egg. Add some salt and pepper.
    2. Gently mix the ingredients.
    3. Make 9 or 12 meatballs from the mixture. Put the balls on an oiled baking sheet.
    4. Bake the balls in the oven for 20 minutes at 320°F.
    5. While the balls are being baked, blender the tomatoes.
    6. Pour the tomatoes in a deep sauce-pan. Add cream, salt and pepper.
    7. Carefully put the balls in the sauce and stir them for 20 more minutes until they are ready.
    8. The meatballs are perfect with mashed potatoes and slices of avocado. Enjoy your meal!

We tried to elaborate an ideal recipe of lasagna bolognese tested by many experienced amateur cooks – and here it is! When talking about the Italian cuisine, it is the lasagna what immediately comes to mind. Lasagna is one of the most popular Italian courses known throughout the world. It has hundreds of variations and each person makes it differently. Though lasagna recipes are quite sophisticated it is definitely worth trying to make it – no doubt that all of your guests will be extremely delighted with such a dinner.
    Ingredients
    1. Pasta sheets 10-12
    2. Minced beef 0.6 lb
    3. Tomatoes 4
    4. Carrot 1
    5. Garlic cloves 2-3
    6. Onion 1
    7. Parsley 0.5 tuft
    8. Stemmed celery 0.5 tuft
    9. Dill 0.5 tuft
    10. Olive oil 3 tbsp
    11. Butter 0.1 lb
    12. Milk 0.5 liter
    13. Flour 1-2 tbsp
    14. Heavy cream 100 ml
    15. White wine 100 ml
    16. Parmesan 0.2 lb
    17. Salt
    18. Pepper
    19. Dried species
    20. Nutmeg
    21. Sugar 2 tbsp

    Instructions
    1. Heat the olive oil in a large stew-pan and fry the minced beef for 4-5 minutes.
    2. Peel an onion, garlic, carrots and celery. Grate the garlic and chop the vegetables. Add them to the beef and continue frying.
    3. Add chopped parsley, salt, pepper, sugar and white wine. Boil the ingredients, cover the pan and leave them stimmer.
    4. Scald the tomatoes with boiling water and peel them. The tomatoes have to be really ripe. Grind them up with a blender into puree. Add the puree to the stew-pan and pour some hot water (½ cup maximum).
    5. When the sauce boils up, add some dried species. Italian species such as basil, thyme and rosemary will suit perfectly. Pour ½ cup of heavy cream into the stew-pan.
    6. Stew the sauce on the lowest heat possible for 2 hours. You can add some more salt, pepper, sugar or species if you like. After that the bolognese is ready!
    7. To make bechamel melt butter (do not use any spreads or margarine) in a separate pan. As soon as the butter melts and begins to bubble, add flour and stir the mixture with a wooden spoon, make sure that there is no lumps in the mixture! Pour cold milk little by little while stirring the sauce. Boil the sauce on low heat for 10-12 minutes. You can add some nutmeg or pepper to make bechamel a little bit more spicy.
    8. Butter the baking dish and spread 2-3 tablespoons of bechamel on its bottom. Put one layer of pasta sheets and spread them with bechamel. Add some bolognese and cover it with more pasta sheets. The next steps are easy: pasta sheets – bechamel – bolognese. Repeat them until you get 5-6 layers of pasta. The last layer of pasta sheets is to be spread by bechamel only.
    9. Sprinkle the lasagna with parmesan and bake it in the oven for 30-40 minutes at 400°F.

    Ingredients
    1. Boned chicken thighs 1 lb.
    2. Oil 1 tbsp.
    3. Onion 1 small
    4. Garlic powder ½ tsp.
    5. Dried mixed herbs 1 tsp
    6. Salt
    7. Pepper
    8. Chicken stock 1 ½ cup
    9. Cream ½ cup
    10. Lemon 1
    11. Cornflour 1 tbsp.

    Instructions
    1. Season the chicken with salt and pepper and roll in garlic and herbs.
    2. Heat the oil in a frying pan and gently fry the onion until golden. Remove the onion from the pan and fry the chicken until golden.
    3. Put the chicken and onion in the crock-pot. Add the stock liquid. Cover and cook on high for 4 hours. Do not remove the lid whilst the dish is cooking.
    4. Remove the chicken and keep warm. Add the cream, 1 tsp grated lemon zest and 2 tbsp. of lemon juice to the crock-pot.
    5. Dissolve the cornflour in a little cold water and transfer the contents of the stock pot to a saucepan. Add the cornflour liquid and cook until the sauce thickens.
    6. Pour the sauce over the chicken and serve with rice.

    For most kids, the strong flavours of adult chilli-con-carne will be off-putting. So why not give this delicious, kid-friendly chilli recipe a try? It’s less spicy than most chilli recipes and contains fewer kidney beans, the texture of which some little ones are not too keen on. The addition of sweetcorn adds a splash of colour and means that you won’t have to serve it with vegetables on the side. This recipe is guaranteed to become a family favourite. The bright, contrasting colours in this dish look great and the flavours combine to create something really special. As your kids get older you can try increasing the quantities of chilli-powder and cumin, and doubling the quantity of kidney beans.
    Ingredients
    1. Cooking oil 1 tbsp
    2. Lean minced beef 1 lb.
    3. Onion (peeled and chopped) 1
    4. Red pepper (de-seeded and chopped) 1
    5. Mild chilli powder ½ tsp
    6. Ground cumin seeds ½ tsp
    7. Tomato puree 2 tbsp
    8. Tin tomatoes 1 lb.
    9. Beef stock 1 cup
    10. Kidney-beans (drained and tinned) ½ lb.
    11. Sweetcorn kernels 1 small tin
    12. Salt
    13. Pepper
    14. Chopped fresh parsley or grated cheese to garnish (optional)

    Instructions
    1. Heat the oil in a large frying pan. Add the chopped onion and cook until the onion softens and begins to brown. Add the chopped red pepper and cook for a further 2 minutes, stirring with a wooden spoon.
    2. Remove the onion and pepper with a slatted spoon and now fry the mince until browned all over.
    3. Add the cooked onion and pepper, the chilli powder, cumin, tomato puree, tomatoes and beef stock. Season with a little salt and pepper and bring to simmering point.
    4. Simmer for 20 minutes, stirring occasionally. Then add the drained tinned kidney beans and sweetcorn and cook for a further 10 minutes.
    5. Serve with plain boiled rice or with wraps. If using the parsley garnish, allow the kids to sprinkle their own chopped parsley on top. Fussy eaters might prefer a little grated cheese on top, or nacho-chips on the side.
