You don’t need to be a cook to please yourself with the masterpiece of Mexican cuisine – real-deal guacamole! Select the properly ripe avocados (the ones that not too hard and not too soft on pressing), add a pinch of salt, cilantro, onion, don’t forget some chile, a drop of lemon juice and a secret ingredient — and here it is! Traditional or unusual variant? Choose the one to your taste!

Ingredients
- Avocados 2
- Kosher salt 1/2 tsp
- Lemon juice 1 tbsp
- Onion (finely chopped) 4 tbsp
- Serrano chile (finely chopped and deseeded) 1
- Cilantro (finely chopped) 3 tbsp
- Black pepper (powder)

Instructions
- Halve and pit the avocados. Scoop out the avocado flesh into a small bowl, and mash it with a fork if you want guacamole to be chunky, or with a blender, if you prefer it creamy.
- Add the lemon juice and mix gently.
- Sprinkle with salt and pepper.
- Add the onion, chile and chopped cilantro, and mix well.
- Taste the mixture. You may want to add some salt or lemon juice to it.
- Cover the bowl with a lid or plastic wrap and put it into refrigerator for an hour or more. Serve with tortilla chips.

Guacamole With Nuts and Goat Cheese

Ingredients
- Hass avocados (halved and pitted) 2
- Onions (finely chopped) 2 tbsp
- Jalapeno (minced) 1 tbsp
- Salt ½ - 1 tsp
- Cilantro (chopped) ¼ cup
- Lime juice 2 tbsp
- Almonds or other nuts (chopped) ¼ cup
- Goat cheese (crumbled) 3 tbsp

Instructions
- Mince and mash the onion, chile and half of the cilantro. Sprinkle with salt, mix well and put the mixture into a small bowl.
- Add the lime juice and mix again.
- Scoop out the avocado flesh, mash it with a fork and mix it with the other ingredients in the bowl.
- Add the chopped nuts, crumbled goat cheese and the other half of the cilantro. Mix guacamole with a fork and serve it right away.
