Salmon with Mashed Peas

Even if cooking is not your strong point, you are sure to succeed with this dish. It takes just half an hour to cook, so why not have it for dinner tonight?
Ingredients
- Salmon fillets 4
- Peas 1½ cup
- Leeks (chopped) 1 cup
- White wine 1½ cup
- Water ¼ cup
- Salt ½ tsp.
- Pepper ¼ tsp.
- Half-and-half ¼ cup

Instructions
- Cover a saucepan with cooking spray. Simmer leeks for 1-2 minutes, constantly stirring. Pour in wine mixed with water and add peas. When the water boils, set the heat to medium and cook peas for 5-7 minutes.
- Spray a skillet with cooking spray and heat it a bit. Rub the salmon with ¼ tsp. of salt, put the salmon fillets onto the skillet and cook them for 6-8 minutes, then turn them and cook for 5-6 minutes more.
- Pulse the peas in blender with half-and-half. Add pepper and the rest of salt. Serve salmon with mashed peas and some salad to your taste.

Salmon With Orange Sauce

Strange as it may seem, salmon pairs just fine with sweet sauces, like this orange one. If you are looking for an exquisite entree, this recipe is the right choice.
Ingredients
- Salmon fillets 4
- Orange juice (fresh) 1¼ cup
- Soy sauce ¼ tsp.
- Salt ¼ tsp.
- Pepper ¼ tsp.

Instructions
- Preheat oven to 300 F. Cover a baking pan with foil and spray it with cooking spray.
- Heat juice to boiling and let is boil 10 minutes. Add soy sauce, stir and let it boil for another minute.
- Sprinkle salmon fillets with salt and pepper and put it onto the baking pan (flesh side down). Put the baking pan into the oven for 15-20 minutes.
- Transfer salmon to the plates and pour it with orange sauce. Serve with vegetable puree, fresh vegetables or wild rice.

Honey-Glazed Salmon

Tender salmon flesh and sweet flavorful honey – it’s it a treat? That’s exactly what you need on a cold winter day!
Ingredients
- Salmon fillet 1 large
- Rice wine vinegar 3 tbsp.
- Sesame oil 1 tbsp.
- Soy sauce (light) ⅓ cup
- Honey ⅓ cup
- Chili-garlic sauce 2 tsp.
- Dijon mustard 1 tbsp.
- Sesame seeds

Instructions
- Heat oven to 475 F. Mix vinegar with sesame oil, soy sauce, honey, chili-garlic sauce and mustard. Save ½ cup of sauce for later.
- Cover a baking tray with a sheet of baking paper, and put salmon on it flesh side up. Sprinkle the fish with 2 tbsp. of sauce.
- Put salmon into the oven for 10 minutes. Then take it out, pour salmon with the remaining part of the sauce (do not use the saved ½ cup of sauce for that!) and bake the fish for 10-15 more minutes.
- Take the tray out of the oven and carefully separate the flesh from the skin with two wide spatulas. Cut the fillet, sprinkle with sesame seeds and serve it with roasted vegetables and the saved ½ cup of sauce.
