Roasted goose with apples

The most traditional course for Thanksgiving Day is turkey. But this time we decided to offer a good alternative which may bring some variety to your dinner.
Ingredients
- Goose 6 lb
- Sour apples 2 lb
- Salt 2 tbsp
- Pepper 1 tsp
- Vinegar 3% ½ cup
- Water

Instructions
- Soak the goose in water with vinegar and leave it for the night. It will make the meat softer.
- In the morning dry the goose with a towel and rub it with salt and pepper both inside and outside.
- Cut the apple into 8 pieces each and fill the goose with them.
- Put the goose into a baking sleeve and bake it in the oven at 460°F for 30 minutes. After that turn down the temperature to 320-350°F and leave the goose in the oven for 1 hour. Then turn the goose upside down and bake it for 1 more hour.
- Optional: put the baking sleeve off the goose and grill it to get a crispy crust.

Cranberry Sauce

This sauce is a good dressing to the goose but you can serve it with turkey or duck as well.
Ingredients
- Cranberry ¾ lb
- Sugar ½ lb
- Cherry liqueur 3 tbsp
- Water ½ cup

Instructions
- Mix the ingredients in a pan, cover and simmer for 15-20 minutes stirring the sauce from time to time.
- Cool the sauce down.

Potato salad is a part of the traditional menu in many European countries. Nevertheless, it will perfectly suit any banquet.
Ingredients
- Onion 1
- Pickles 3
- Mayonnaise 5-6 tbsp
- Salt
- Pepper
- Eggs 6
- Celery stalks 1
- Potatoes 6

Instructions
- Boil the eggs and the potatoes. Cool them down.
- Dice the eggs and the potatoes and put them into a salad bowl.
- To make the dressing chop 1 onion, the pickles and the celery stalks finely. Add mayonnaise, salt and pepper.
- Add the dressing to the eggs and potatoes in a bowl and stir.
- Leave the salad in the fridge for 6 hours minimum.
- Put the salad out of the fridge 20-30 minutes before serving.
