Rice pudding is a dish familiar to anyone. Probably your mummy or granny used to cook it when you were a child and at that time it seemed the food of the gods to you! There are plenty of variants of this recipe – some people boil the pudding, some cook it in the oven and some just mix cold ingredients in a bowl. Here we suggest a boil-recipe to try.

Ingredients
- Milk 2 1/2 cups
- Rice, white, short grain, uncooked 1/3 cup
- Egg 1
- Sugar, dark brown 1/4 cup
- Vanilla extract 1 tsp
- Cinnamon 1/4 tsp
- Raspberry jam to taste
- Salt to taste

Instructions
- Bring milk, rice and salt to a boil in a saucepan. Reduce heat and simmer for 20-25 minutes, or until the rice is tender stirring frequently.
- Whisk an egg and sugar together in a bowl. Gradually stir in a half cup of the hot rice.
- Pour the egg mixture back into the saucepan with rice and milk and simmer until thickened (5-10 minutes). Do not bring the mixture a boil.
- Stir in vanilla extract. Remove from heat and add cinnamon. Serve with raspberry jam or any fresh berries.
