Sweet Potato Casserole With Pecans
This sweet potato casserole makes a perfect Sunday dinner, when you crave for something ultimately sweet and simple.
Ingredients
  1. Sweet potatoes 5-6
  2. Brown sugar 2 cups
  3. Butter 12 tbsp
  4. Vanilla extract 1½ tsp
  5. Milk ½ cup
  6. Eggs 2
  7. All-purpose flour ½ cup
  8. Pecans (chopped) 1 cup

Instructions
  1. Preheat oven to 350 degrees. Peel the potatoes and boil them until tender.
  2. Drain the water and let the potatoes get cool. Then mash them with 8 tbsp. of butter, milk and eggs. Add 1 cup of sugar, vanilla and stir well.
  3. Transfer the mashed potatoes into a casserole dish.
  4. Make the topping by mixing together the remaining sugar, flour, pecans and 4 tbsp. of butter together. Evenly cover the mashed potatoes with the topping mixture.
  5. Put the casserole dish into the oven for half an hour. When the topping turns light brown, take the casserole out of the oven. Serve warm.

Sweet potato casserole with mini marshmallows
Add a festive touch to the casserole – all you need is a handful of mini marshmallows! Kids are sure to like that!
Ingredients
  1. Sweet potatoes (canned and drained) 3 cups
  2. Butter (melted) ¾ cup
  3. Milk ⅓ cup
  4. Granulated sugar ¾ cup
  5. Brown sugar ⅔ cup
  6. Vanilla 1 tsp
  7. Eggs 2
  8. Salt to taste
  9. Flour ⅔ cup
  10. Pecan pieces (chopped) 1 cup
  11. Mini marshmallows ½ cup

Instructions
  1. Preheat the oven to 350 degrees. Beat the eggs up.
  2. Mash the sweet potatoes with the ½ cup of melted butter, milk and beaten eggs. Add granulated sugar, vanilla and salt, and mix well. Then pour the potato mixture into casserole dish.
  3. Mix together the remaining butter, brown sugar, flour and pecan pieces. Spread the topping crumbs evenly over the potato mixture layer. Bake for 15-20 minutes.
  4. Add mini marshmallows and bake the casserole for 10 more minutes.
  5. Let stand for the mixture to cool and solidify a little bit before serving.
