What could be better than coming home after a hard day at work to the aroma of slow-cooked savoury food which has been cooking happily in the crock-pot while you were out? One of the things you’ll love about your crock-pot is that it allows you to use cheaper cuts of meat without compromising on flavour or tenderness. Try out these tasty, budget-friendly crock-pot recipes. They’ll each make a great mid-week supper.

Pork shoulder in apple cider
Ingredients
  1. Pork shoulder steaks 4 large
  2. Salt
  3. Pepper
  4. Celery (peeled and chopped) 1 stick
  5. Carrot (peeled and chopped) 1
  6. Onions (peeled and chopped) 2
  7. Apple (cored and chopped) 1
  8. Olive oil 1 tbsp
  9. Dried thyme 1 tbsp.
  10. Cider 13 ½ oz.
  11. Ham or chicken stock 3 ½ oz.
  12. Cornflour 2 tsp.

Instructions
  1. Place the chopped celery, carrots, onions and apple in the base of the crock-pot.
  2. Fry the pork steaks in the hot oil until golden. Season with salt and pepper and add the cider and stock to the pan. Heat until the liquid starts to bubble.
  3. Transfer the steaks and liquid to the crock-pot and stir in the dried thyme.
  4. Cover and cook on low for 7 hours. Do not open the lid whilst cooking.
  5. Dissolve the cornflour in a little cold water. Remove the steaks from the pot and add the cornflour liquid to the sauce. Stir until thickened. Pour sauce and vegetables over the steaks and serve.

Vegetarian Chilli
Ingredients
  1. Butternut squash (peeled and chopped) ¾ lb.
  2. Oil 1 tbsp.
  3. Celery (chopped) 2 sticks
  4. Carrot (peeled and chopped) 1
  5. Red pepper (cored and diced) 1 small
  6. Green pepper (cored and diced) 1 small
  7. Chilli powder 2 tbsp.
  8. Cumin powder 1 tsp
  9. Peeled tomatoes 1 ¾ lb.
  10. Red kidney beans 2 lb.
  11. Vegetable stock 12 oz.
  12. Salt
  13. Pepper

Instructions
  1. Heat the oil in a frying pan. Add the chopped onions. Cook for around 5 minutes then add the butternut squash, celery, carrot and peppers. Fry for a further 3 minutes until the vegetables start to soften and turn light golden around the edges. Add the chilli and cumin.
  2. Transfer the contents of the frying pan to the crock-pot. Add the tinned tomatoes, beans and the stock. Season with salt and pepper.
  3. Cover and cook on low for 6 hours. Do not remove the lid during cooking.

Beef brisket in beer
Ingredients
  1. Beef brisket 3 ½ lb.
  2. Salt
  3. Pepper
  4. Onions (peeled and sliced into rings) 2 large
  5. Carrots 2
  6. Celery 1 stick
  7. Garni 1 bouquet
  8. Beer (preferably Irish Stout) 12 oz.

Instructions
  1. Season the meat with the salt and pepper. Put the meat and chopped vegetables into the crock-pot. Pour in the beer.
  2. Cover and cook on low for 9-10 hours. Serve.
