- Chicken breasts 2 lb
- Flour ½ cup
- Eggs 2
- Falafel mix 6 oz
- Tomatoes 2
- Jalapeno pepper 1
- Cheese feta 1½ cup
- Parsley 2 tbsp
- Olive oil 2 tbsp
- Tahini ½ cup
- Water ½ cup
- Lemon juice 2 tbsp
- Garlic 1 clove
- Vegetable oil for frying
- Salt and pepper for seasoning

Instructions
- Prepare the oven: heat it to 430°F.
- Mix diced tomatoes, crumbled feta, olive oil, jalapeno pepper and parsley.
- Make tahini sauce with water, lemon juice and smashed garlic. Season with salt and pepper. Prepare 3 bowls: with flour, beaten eggs and falafel mix.
- Season the chicken with salt and pepper; cover with flour.
- Coat chicken breasts with egg, then with falafel mix.
- Preheat a skillet and heat vegetable oil.
- Fry the chicken over medium heat until golden and crisp (5-7 minutes).
- Drain on paper towels.
- Serve chicken breasts with salad and sauce.

Ingredients
- Chicken breast 2
- Grapefruit 1
- Pineapple 1 cup
- Lime 1
- Water 2 tbsp
- Fish sauce 2 tbsp
- Unsweetened coconut milk ½ cup
- Sugar ¼ cup + 2 tsp
- Coriander 1½ tsp
- Cumin 1½ tsp
- Turmeric ½ tsp
- Black pepper ½ tsp
- Cayenne pepper ½ tsp
- Thai green chile 1
- Salt for seasoning
- Olive oil for drizzling

Instructions
- Mix the following ingredients: 2 teaspoons of sugar, coriander, cumin, turmeric, pepper and cayenne.
- Cover chicken breast halves in the spices and leave in fridge for 1 hour.
- Mix the remaining sugar with water and simmer over low heat until amber (it will take 10 minutes).
- Remove from heat, add coconut milk and mix until smooth.
- Add fish sauce, chile and salt in the sauce.
- Gently mix the diced fruits with a pinch of salt and cayenne in a separate bowl.
- Drizzle the chicken with olive oil and season it with salt.
- Grill over medium heat for 12-15 minutes.
- Serve with fruit salad and sauce.
