  2. Flour ½ cup
  3. Eggs 2
  4. Falafel mix 6 oz
  5. Tomatoes 2
  6. Jalapeno pepper 1
  7. Cheese feta 1½ cup
  8. Parsley 2 tbsp
  9. Olive oil 2 tbsp
  10. Tahini ½ cup
  11. Water ½ cup
  12. Lemon juice 2 tbsp
  13. Garlic 1 clove
  14. Vegetable oil for frying
  15. Salt and pepper for seasoning

Instructions
  1. Prepare the oven: heat it to 430°F.
  2. Mix diced tomatoes, crumbled feta, olive oil, jalapeno pepper and parsley.
  3. Make tahini sauce with water, lemon juice and smashed garlic. Season with salt and pepper. Prepare 3 bowls: with flour, beaten eggs and falafel mix.
  4. Season the chicken with salt and pepper; cover with flour.
  5. Coat chicken breasts with egg, then with falafel mix.
  6. Preheat a skillet and heat vegetable oil.
  7. Fry the chicken over medium heat until golden and crisp (5-7 minutes).
  8. Drain on paper towels.
  9. Serve chicken breasts with salad and sauce.

Ingredients
  1. Chicken breast 2
  2. Grapefruit 1
  3. Pineapple 1 cup
  4. Lime 1
  5. Water 2 tbsp
  6. Fish sauce 2 tbsp
  7. Unsweetened coconut milk ½ cup
  8. Sugar ¼ cup + 2 tsp
  9. Coriander 1½ tsp
  10. Cumin 1½ tsp
  11. Turmeric ½ tsp
  12. Black pepper ½ tsp

  14. Thai green chile 1

Instructions
  1. Mix the following ingredients: 2 teaspoons of sugar, coriander, cumin, turmeric, pepper and cayenne.
  2. Cover chicken breast halves in the spices and leave in fridge for 1 hour.
  3. Mix the remaining sugar with water and simmer over low heat until amber (it will take 10 minutes).
  4. Remove from heat, add coconut milk and mix until smooth.
  5. Add fish sauce, chile and salt in the sauce.
  6. Gently mix the diced fruits with a pinch of salt and cayenne in a separate bowl.
  7. Drizzle the chicken with olive oil and season it with salt.
  8. Grill over medium heat for 12-15 minutes.
