Caramelized Zesty Okra

Ingredients
- Okra (halved) 4 c
- Olive oil 4 T
- Salt to taste
- Black pepper to taste
- Lemon juice 1 T
- Curry powder 1 t

Instructions
- Preheat your oven to 450 F.
- Meanwhile, pour the halved okra in a mixing bowl and toss with olive oil. Sprinkle on salt and black pepper, toss to coat. Place the okra on a lined baking sheet and bake for 30 minutes or until the okra is tender and caramelized.
- Carefully remove the okra and sprinkle on curry powder, then spritz with lemon juice. Serve with rice.

Spanish Tortilla de Patatas

Ingredients
- Baking potatoes (peeled) 4 medium
- Onion (minced) 1 medium
- Nonfat cooking spray
- Egg whites 8
- Salt to taste
- Black pepper to taste

Instructions
- Be sure to wash and peel the potatoes, then quarter them so they cook faster. Coat large a nonstick skillet with cooking spray and cook the potatoes and the minced onion over low heat until everything is tender and cooked through.
- Place the potatoes in a mixing bowl and pour the egg whites over them. Toss to coat everything.Spray the skillet again and pour the entire potato and egg white mixture into the skillet.
- Cook over medium heat until everything is cooked through; remove skillet from heat. Take a large dinner plate and place it over the skillet. Carefully flip the skillet upside down to put the tortilla onto the dinner plate. Then slide the tortilla back into the skillet so the other side can cook through.
- Remove from heat, sprinkle on salt and black pepper and serve in wedges with salad.
