Delicious Potatoes: 3 Ways

Potatoes… Boring? Not if you try these simple recipes – serve them with meat, fish or vegetables and a perfect dinner is ready!

Scalloped Potatoes
Ingredients
  1. Potatoes, thinly sliced 4 cups
  2. Butter 3 tbsp
  3. Flour 3 tbsp
  4. Milk 1.5 cups
  5. Cheddar cheese, grated 1 cup
  6. Parmesan cheese 0.5 cup
  7. Salt 1 tsp
  8. Pepper to taste

Instructions
  1. Melt butter in a bowl and blend in flour. Gradually stir in cold milk. Add salt and pepper.
  2. Cook the sauce in a small pan on low heat for a few minutes stirring permanently until it thickens. Do not bring it to a boil.
  3. Turn of heat and stir in cheddar cheese.
  4. Grease a baking dish with some butter and lay out half of the potatoes. Pour half, of the sauce over the potatoes. Repeat the same to make the second layer.
  5. Sprinkle with parmesan cheese and bake in the oven at 350°F for 60 minutes.

Mashed Potatoes
Ingredients
  1. Potatoes 1.5 lbs
  2. Heavy cream 4 tbsp
  3. Butter 2 tbsp
  4. Milk 1-2 tbsp
  5. Salt
  6. Pepper

Instructions
  1. Cut the potatoes into quarters and place in a large pan. Pour in cold water so that it covers the potatoes and add a little salt. Bring to a boil, reduce heat and cook for 15-20 minutes, or until you can easily poke through them with a knife.
  2. Melt the butter and warm up the cream a little, while the potatoes are cooking.
  3. When the potatoes are ready, drain them and add butter and cream. Mash the potatoes with a potato masher. Gradually stir in the milk and season with salt and pepper.

Roasted Potatoes
Ingredients
  1. Potatoes 1.5 lbs (or more if needed)
  2. Olive oil
  3. Rosemary
  4. Thyme
  5. Salt

Instructions
  1. Dice the potatoes.
  2. Pour some olive oil in a baking dish and spread it with a cooking brush over the surface.
  3. Lay out the potatoes, oil them and season with thyme, rosemary and salt.
  4. Cook the potatoes in the oven at 400°F for 30-35 minutes, or until they are soft.
