Cauliflower Crust Pizza
Ingredients
  1. Nonstick cooking spray
  2. Cauliflower (grated) 2 ½ c
  3. Large egg (beaten) 1
  4. Part-skim mozzarella cheese (shredded) 1 ¼ c
  5. Parmesan cheese (grated) 2 T
  6. Salt to taste
  7. Black pepper to taste
  8. Tomato sauce ¼ c
  9. Grape tomatoes (halved) 1 c
  10. Garlic (sliced) 2 cloves
  11. Red pepper flakes ¼ t
  12. Fresh basil leaves for garnish

Instructions
  1. Preheat oven to 425 F. Grease baking sheet with nonstick spray.
  2. Use cheese grater to grate cauliflower; place in bowl; microwave 7-8 minutes. Remove; cool.
  3. Add egg, salt, black pepper, mozzarella, and Parmesan to cauliflower; mix. Place on baking sheet; press down to create crust. Coat with nonstick spray; bake 10-15 minutes.
  4. Remove from oven; top with sauce, grape tomatoes, garlic, red pepper flakes, and basil. Bake 10 minutes; serve.

Creamy Chicken Salad
Ingredients
  1. Boneless and skinless chicken breasts (cooked) 2
  2. Nonfat Greek yogurt ¼ c
  3. Celery (diced) ⅓ c
  4. Apple (diced) ⅓ c
  5. Grapes (halved) ⅓ c
  6. Almonds (chopped) ¼ c

Instructions
  1. Dice the chicken breasts; put in bowl. Add Greek yogurt; combine.
  2. Add celery, apples, grapes and almonds; combine.
  3. Store in fridge or serve immediately.

Fiesta Shrimp Salad
Ingredients
  1. Cider vinegar ¼ c
  2. Extra-virgin olive oil 3 T
  3. Chipotle in adobo (minced) 1 T
  4. Ground cumin 1 t
  5. Salt ¼ t
  6. Shrimp (peeled and cooked) 1 lb.
  7. Black beans (drained and rinsed) 15 oz.
  8. Cherry tomatoes (quartered) 1 c
  9. Poblano pepper (chopped) 1
  10. Scallions (chopped) ¼ c
  11. Fresh cilantro (chopped) ¼ c

  1. In mixing bowl, combine salt, cumin, oil, vinegar, and chipotles.
  2. Add shrimp, beans, tomatoes, scallions, cilantro, and poblano; combine.
