Mexican Rice Recipe
Ingredients
  1. Chicken broth 2 cups
  2. Long-grain rice (uncooked) 1 cup
  3. Onion (chopped) ¼ cup
  4. Garlic (minced) 2 cloves
  5. Ground cumin ½ tsp
  6. Tomato sauce ½ cup
  7. Vegetable oil 3 tbsp
  8. Salt to taste

Instructions
  1. Heat oil over medium-high heat in a large saucepan, add onion and garlic, cook until lightly browned.
  2. Add rice and cook, stirring constantly, until golden. Sprinkle with salt and cumin.
  3. Add tomato sauce and chicken broth, bring to a boil.
  4. Lower the heat, cover, and simmer for 20 to 25 minutes. Fluff with a fork.
