Lunch

Tuna and Bean Soup
Ingredients
  1. Tuna (in water) 6 oz
  2. White beans 7 oz
  3. Kale ½ bunch
  4. Olive oil ½ tbsp
  5. Onion 1 small
  6. Garlic 2 cloves
  7. Chicken broth 2 cups
  8. Italian seasoning ½ tsp
  9. Paprika ¼ tsp
  10. Parmesan (grated) 2 tbsp
  11. Salt to taste
  12. Pepper to taste

Instructions
  1. Dice the onion, chop the kale and fine chip the garlic.
  2. Pour the olive oil into a large sauce pan and heat it over medium heat. Then add the onion and cook for 5 minutes. Add the garlic and cook for 2 more minutes.
  3. Add the broth, tuna, white beans and tuna, and bring to a boil. After that reduce the heat and cook the soup for 8 minutes. Then sprinkle it with Italian seasoning and paprika, add the chopped kale and simmer for 5 more minutes.
  4. Add salt and pepper. Finally, sprinkle the soup with parmesan and wait till it melts. Serve hot.

Crispy Rosemary Chicken and Fries
Ingredients
  1. Chicken thighs 4
  2. Potatoes 4
  3. Olive oil as needed
  4. Rosemary 1/2 tbsp
  5. Oregano 1 tsp
  6. Garlic 2 cloves
  7. Salt to taste
  8. Pepper to taste

Instructions
  1. Preheat the oven to 375 °F.
  2. Place chicken thighs and quartered potatoes into a large bowl.
  3. Add olive oil and stir thoroughly.
  4. Place the chicken and potato wedges in a large baking dish.
  5. Add fresh rosemary, oregano, chopped garlic, salt and pepper.
  6. Bake uncovered in the preheated oven for 1 hour.
