Chicken Parcels
Ingredients
  1. Chicken breasts 4
  2. Salt
  3. Pepper
  4. Thyme or parsley (chopped) 2 tbsp
  5. Lemons (sliced) 2
  6. Butter 2 tbsp

Instructions
  1. Heat the oven to 400⁰F.
  2. Season the chicken breasts and lay each breast on a large rectangular piece of tin-foil. Sprinkle on the chopped herbs and top with the lemon slices and a generous knob of butter. Fold up the foil so that the chicken breasts are each in their own little sealed parcel.
  3. Place on an oven tray and cook for 25-30 minutes until the chicken breasts are thoroughly cooked through.
  4. Serve with the juices from the foil packets poured over the chicken.

Hot Chicken Salad
Ingredients
  1. Cooking oil 1 tbsp
  2. Cooked chicken ¾ lb.
  3. Cooked ham or cooked bacon 2 oz.
  4. Juice of 1 lemon
  5. Tarragon leaves (chopped) 1 handful
  6. Salad leaves (chopped and washed) 1 bag
  7. Vinaigrette salad dressing 2 tbsp

Instructions
  1. Heat the oil in a frying pan and add the chopped cooked ham and chicken. Heat until warmed through.
  2. Add the lemon juice and chopped tarragon and cook for a further one minute.
  3. Arrange the washed salad leaves on a large serving plate and mix with the vinaigrette dressing.
  4. Spoon the cooked chicken mixture into the centre of the salad. Serve immediately.

Chinese Chicken
Ingredients
  1. Boned chicken thighs 8
  2. Chinese rice wine 1 ¼ c
  3. Soy sauce ½ c
  4. Sesame oil 2 tsp
  5. Fresh ginger (chopped) 2 tsp
  6. Chicken stock ½ c
  7. Red pepper (seeded and cut into thin shreds) 1
  8. Spring onions (washed and chopped) 3

Instructions
  1. Pre-heat the oven to 400⁰F.
  2. Place the chopped chicken thighs, rice wine, soy sauce, ginger and chicken stock together in a large flame-proof, oven-proof pot. Heat on the hob until the liquid boils and the chicken browns on the outside.
  3. Place the pot in the pre-heated oven and cook for 40 minutes. Serve garnished with the shredded red pepper and chopped spring onion.

Chicken Kebabs
Ingredients
  1. Chicken breasts cut into cubes 4
  2. Soy sauce 2 tbsp
  3. Orange juice ½ c
  4. Olive oil 3 tbsp

  8. Red pepper (chopped into cubes) 1 large
  9. Green pepper (chopped into cubes) 1 large
  10. Red onion (peeled and chopped into cubes) 1 large

Instructions
  1. Prepare the marinade by mixing together the soy sauce, orange juice, olive oil and garlic salt.
  2. Season the chicken cubes and soak the chicken in the marinade for at least one hour.

  1. Heat the oil in a large frying pan. Add the garlic and chilli and cook for 1 minute.
