Greek Yogurt Chicken Salad
Ingredients
  1. Chicken breasts 2
  2. Greek yogurt ¼ cup
  3. Celery 2
  4. Apple 1
  5. Grapes ⅓ cup
  6. Almonds ¼ cup

Instructions
  1. Poach boneless, skinless chicken breasts, dice and place into a large bowl.
  2. Mix in Greek yogurt, stir until chicken is well coated.
  3. Dice celery, apple and halve grapes.
  4. Add mixture to the bowl together with slivered almonds and mix in.

Ingredients
  1. Greek yogurt 1 cup
  2. Lemon juice 2 tbsp
  3. Ground cumin ½ tsp
  4. Crushed red pepper ¼ tsp
  5. Chicken 3 cups
  6. Red bell pepper 1
  7. Green olives ½ cup
  8. Red onion ½ cup
  9. Fresh cilantro ¼ cup
  10. Wheat pitas 3
  11. Lettuce 12 leaves
  12. Tomatoes 2

Instructions
  1. Combine Greek yogurt, lemon juice, ground cumin and crushed red pepper in a small bowl; set aside.
  2. Chop cooked chicken, red bell pepper, pitted green olives, cilantro and dice red onion.
  3. Combine ingredients in a large bowl and add yogurt mixture. Toss to coat thoroughly.
  4. Cut each pita in half and line with a lettuce leaf and one or two tomato slices (1/8-inch-thick).
  5. Add 1/2 cup chicken mixture to each pita half.

Ingredients
  1. Greek yogurt 1 cup
  2. Grapes ½ cup
  3. Curry powder 2 tsp
  4. Salt a dash
  5. Walnuts ¼ cup
  6. Lettuce 8 leaves
  7. Chicken 2 cups

  1. Mix yogurt with halved grapes, curry powder, add salt and walnuts.
  2. Chop the lettuce, and place into a large bowl.
  3. Chop poached chicken, add the yogurt mixture, and spoon on top of the bed of lettuce.
