    Pineapple Upside-Down Cake Recipe

    Ingredients
    1. Butter 5 oz
    2. Brown sugar 2 oz
    3. Caster sugar 3,5 oz
    4. Pineapple rings 7
    5. Pineapple syrup 2 tbsp
    6. Maraschino cherries 10
    7. Eggs 2
    8. Flour 3,5 oz
    9. Baking powder 1 tsp
    10. Vanilla extract 1 tsp

    Instructions
    1. Preheat the oven to 325 degrees F.
    2. In a heavy skillet, melt 1,8 oz butter over very low heat. Remove from heat, and sprinkle brown sugar evenly over butter.
    3. Arrange pineapple rings on the bottom of the skillet, then place halved cherries in the centres of the rings and between each pineapple slice, if desired.
    4. In a large bowl, sift together flour and baking powder, add the rest of the ingredients and beat to a soft consistency.
    5. Spread the batter evenly over pineapple and cherries in the skillet.
    6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out dry.
    7. Cool the cake for 5 minutes before turning out onto a plate.
    8. Serve cool or warm with a scoop of ice cream.

    Chicken & Andouille Gumbo
    There are many different recipes of Gumbo, but they all are rich and loaded with fresh ingredients. Try this one, your entire family will definitely love it!
    Ingredients
    1. Chicken 2½ pounds
    2. Andouille sausage 1 pound
    3. Water 3 quarts
    4. Flour ½ cup
    5. Vegetable oil 2 tbsp (for cooking)
    6. Vegetable oil ⅔ cup (for roux)
    7. Onion 2
    8. Garlic 2 cloves
    9. Green bell pepper 2
    10. Celery 2 stalks
    11. Diced tomatoes 1 can
    12. Bay leaves 2
    13. Basil 1 tsp
    14. Thyme 1 tsp
    15. Salt to taste
    16. Cayenne pepper to taste

    Instructions
    1. Combine water and chicken in a medium sized pot. Bring water to a boil, then simmer until chicken is tender.
    2. Pour off water and set aside. When chicken is cool, shred it into smaller pieces.
    3. Slice sausage into ¼ inch pieces.
    4. Combine vegetable oil and flour in a heavy Dutch oven. Cook over medium heat for about 20 minutes, stirring constantly, until it turns a dark brown color.
    5. To the roux, add chopped onions, celery, bell peppers and minced garlic, and saute until vegetables are tender.
    6. Add water; bring to a boil.
    7. Add chicken, diced tomatoes, and sliced sausage. Cook for 15 minutes.
    8. Add the bay leaves, thyme, basil, cayenne pepper and salt.
    9. Mix well and simmer uncovered for about 1½ hours, stirring occasionally.
    10. Serve gumbo over rice.

    1. Lean ground beef 1½ lb
    2. Green bell pepper 1

    8. Ground cumin 1 tsp
    9. Bay leaf 1
    10. Pepper to taste

    Instructions
    1. Place lean ground beef, chopped onion and bell pepper in a large skillet and cook over medium-high heat, stirring until meat is browned and the vegetables are tender but not mushy.
    2. Drain excess fat.
    3. Add the chili powder, minced garlic, bay leaf, ground cumin, diced tomatoes, salt and pepper to taste.
    4. Bring to a boil and reduce heat to low.
    5. Cover and simmer for 1 hour, stirring occasionally.
    6. Stir in the kidney beans (rinsed and drained), bring to a boil again, then reduce heat to low and cook uncovered for about 10 minutes, stirring occasionally, until desired thickness is achieved.
