    Ingredients
    1. Butter 120 gr
    2. Milk 0,7 l
    3. Eggs 6
    4. Flour 1½ cups
    5. Cocoa powder ⅔ cup
    6. Sugar 11 tbsp
    7. Whipped cream 1 l
    8. Heavy cream 0,2 l
    9. Chocolate 170 gr
    10. Powdered sugar ¼ cup

    Instructions
    1. Melt the butter (100 gr) in the pot allowing it to turn brown slightly. Set aside.
    2. Warm the milk. Remove from heat.
    3. In a large bowl whisk flour, cocoa powder and sugar (7 tbsp).
    4. Mix in eggs, then gradually mix in the melted butter and warm milk, whisking them until smooth. Chill the mixture.
    5. Pour ¼ cup of crepe batter on a crepe pan over medium heat covering the entire bottom surface.
    6. Flip the crepe when the surface begins to to get brown. Cook about 30 seconds per each side.
    7. Repeat the process with the remaining and cool the crepes when finished.
    8. Lay 1 crepe on a cake plate and cover with a thin layer of whipped cream. Repeat until all crepes are used.
    9. Trim edges for a cleaner look.
    10. For the ganache, mix heavy cream and sugar (4 tbsp) and bring the mixture to boiling, add the melted chocolate and butter (20 gr), whisk until smooth, let cool and spread over the crepe cake.
    11. Garnish the cake with powdered sugar, and chill for 2 hours before serving.

    Ingredients
    1. Eggs 2
    2. Buttermilk ¾ cup
    3. Butter 20 gr
    4. Sugar ¼ cup
    5. Salt ¼ tsp
    6. Flour 1 ½ cups
    7. Baking powder 1 tsp
    8. Baking soda ¼ tsp
    9. Olive oil 2 tbsp

    Instructions
    1. Mix together eggs, buttermilk, sugar and salt, using blender on a low setting for 1-2 minutes.
    2. Add flour, baking powder and baking soda to the mixture, and continue blending until the batter is completely combined.
    3. Heat up olive oil in a crepe pan over medium heat.
    4. Grease up the inner side of metal ring mold with butter and place it in the center of a pan.
    5. Pour the pancake batter into the mold until it’s half full. Cover the pan and cook for about 5 minutes or until bubbles start to form on the top of the pancake.
    6. Flip the pancake and mold over, cover and cook for about 3 minutes or until the pancake is golden brown at the bottom.
    7. Serve with butter, custard, syrup and berries.

    Ingredients
    1. Frozen shortcrust pastry 2 sheets
    2. Ricotta 240g
    3. Parmesan 25g
    4. Button mushrooms 200g
    5. Swiss brown mushrooms 200g
    6. Eggs 3
    7. Olive oil 1 tbsp
    8. Butter 50g
    9. Onion 1
    10. Garlic 2 cloves
    11. Flat-leaf parsley 1/2 cup
    12. Nutmeg 1 pinch
    13. Salt to taste
    14. Pepper to taste

    Instructions
    1. Preheat the oven to 350ºF.
    2. Melt butter in a large skillet over medium-high heat.
    3. Saute the mushrooms, onions and garlic together.
    4. Stir in seasonings and cook for 2 minutes until liquid is evaporated.
    5. Let cool for 5 minutes.
    6. In a large bowl, beat eggs; add salt, pepper, nutmeg and grated parmesan cheese and stir well.
    7. Add the ricotta cheese and thickly sliced mushrooms, mix gently.
    8. Place the shortcrust in a 9 inch oven pan.
    9. Pour the mixture into the crust and fold the edges.
    10. Place into the preheated oven and bake for 40-50 minutes.
