  • Sugar-Free Pancake Recipe: 5 Ways

    Basic pancake recipe
    Yields 4
    Wouldn’t it be great if you could start the day with pancakes, but not have to worry about the effects all that unhealthy added sugar? The good news is that none of the pancake recipes below contain any added sugar but you’ll still love their yummy taste. Use the basic pancake mix below and then choose from our selection of delicious sweet or savory fillings. What a treat!
    Ingredients
    1. Egg 1
    2. Buckwheat flour or plain flour 2 ¼ oz.
    3. Milk or almond milk 8 oz.
    4. Baking powder ½ tbsp.
    5. Olive oil 1 tbsp.

    Instructions
    1. Mix together the egg, milk, buckwheat flour and baking powder until smooth and lump-free. The mixture should be thick, but you should still be able to pour it.
    2. Pour the oil into a good quality, non-stick frying pan on and heat on a medium flame.
    3. When the fat is hot, add about a quarter of the mixture at a time. Flatten it out by tilting the pan and using a spatula if necessary. Wait about 2-3 minutes before flipping it over. Let it cook on the other side for about 1-2 minutes before moving it to a plate and repeating for the next pancake.
    Chose any of these delicious fillings
    1. Tomato and Mushroom – simply fry mushrooms in oil until they are tender, before adding small pieces of tomato, chopped up fresh basil and chives.
    2. Ham and Cheese – top your prepared pancake with a few slices of ham and some grated Emmenthal cheese. Sprinkle on a teaspoon of chopped, fresh chives and roll the pancake up.
    3. Blueberries and Bananas – this combination is both naturally sweet and healthy at the same time. The blueberries can be chopped up and blended into your uncooked pancake mix, perhaps with a little vanilla extract. Otherwise, you can simply eat them as a topping, where they go very well with chopped slices of banana.
    4. Blueberries and Maple Syrup – either mix the blueberries with the other pancake ingredients, which may be the best option if they are from frozen, or you can serve them sprinkled on top of the cooked pancake. Add maple syrup if you fancy a bit of added sweetness.
    5. Brazil Nuts, Bananas and Maple Syrup – another delicious combination involves cutting up Brazil nuts into tiny fragments and sprinkling them on top of your pancakes, along with slices of banana and a tablespoon of maple syrup. This sweet and healthy combination will make you wonder why you ever used to add sugar to your pancakes.

  • Kid-Friendly Chilli Recipe That Tastes So Good

    Kid-Friendly Chilli Recipe

    For most kids, the strong flavours of adult chilli-con-carne will be off-putting. So why not give this delicious, kid-friendly chilli recipe a try? It’s less spicy than most chilli recipes and contains fewer kidney beans, the texture of which some little ones are not too keen on. The addition of sweetcorn adds a splash of colour and means that you won’t have to serve it with vegetables on the side. This recipe is guaranteed to become a family favourite. The bright, contrasting colours in this dish look great and the flavours combine to create something really special. As your kids get older you can try increasing the quantities of chilli-powder and cumin, and doubling the quantity of kidney beans.
    Ingredients
    1. Cooking oil 1 tbsp
    2. Lean minced beef 1 lb.
    3. Onion (peeled and chopped) 1
    4. Red pepper (de-seeded and chopped) 1
    5. Mild chilli powder ½ tsp
    6. Ground cumin seeds ½ tsp
    7. Tomato puree 2 tbsp
    8. Tin tomatoes 1 lb.
    9. Beef stock 1 cup
    10. Kidney-beans (drained and tinned) ½ lb.
    11. Sweetcorn kernels 1 small tin
    12. Salt
    13. Pepper
    14. Chopped fresh parsley or grated cheese to garnish (optional)

    Instructions
    1. Heat the oil in a large frying pan. Add the chopped onion and cook until the onion softens and begins to brown. Add the chopped red pepper and cook for a further 2 minutes, stirring with a wooden spoon.
    2. Remove the onion and pepper with a slatted spoon and now fry the mince until browned all over.
    3. Add the cooked onion and pepper, the chilli powder, cumin, tomato puree, tomatoes and beef stock. Season with a little salt and pepper and bring to simmering point.
    4. Simmer for 20 minutes, stirring occasionally. Then add the drained tinned kidney beans and sweetcorn and cook for a further 10 minutes.
    5. Serve with plain boiled rice or with wraps. If using the parsley garnish, allow the kids to sprinkle their own chopped parsley on top. Fussy eaters might prefer a little grated cheese on top, or nacho-chips on the side.

    Striking Meatloaf Recipe with Apples

This is a relatively straightforward dish to make and the leftovers will keep you going for a couple of days afterwards, either fried-up, or as the perfect filling for a tasty sandwich. In fact, many people claim that meatloaf actually tastes best the next day. The apples used in this recipe add an extra dimension and make this a really striking dish! Part of the success of meatloaf as a dish is its huge variety – it goes well with so many different things. If you’re looking for a delicious new twist, try this fabulous version with apples elevating a simple dish into something very special. It’s not just the sweet moist quality that the apples bring to the dish. It’s a very rare blend of taste, convenience and nutrition.
    Ingredients
    1. Ground beef 2 lbs
    2. Onion (finely chopped) ½
    3. Butter 1 T
    4. Apples (peeled and finely chopped) 4 large
    5. Olive oil 1 T
    6. Fresh breadcrumbs 1 cup
    7. Fresh chopped parsley 2 T
    8. Eggs (beaten) 2
    9. Salt 1 t
    10. Black pepper ½ t
    11. Worcester sauce 2 t

    Instructions
    1. Preheat the oven to 350 F.
    2. Sautee the finely chopped onions in the tablespoon of butter for about 5 minutes until the onions start to soften.
    3. Peel, core and slice one of the apples. Place on a baking sheet drizzled generously with the olive oil.
    4. Mix all of the remaining ingredients together until they are evenly blended.
    5. Place the mixture in a greased loaf pan, lined well with tinfoil which has been lightly brushed with oil.
    6. Place the loaf pan onto the baking tray with the sliced apple, and put this tray in the oven for about an hour. Turn the roasting apples over regularly, so they are well coated in the oil and do not burn. After 60 minutes, check that the meatloaf is cooked through and not pink in the centre. Once you remove it from the oven let it rest for about 15 minutes. Keep the sliced roast apples in a warm place.
    7. Serve the meatloaf with the roast apple slices and vegetables on the side. Cabbage with marjoram goes well with this dish. Kids will enjoy it with a blob of tomato ketchup.
    Notes
    1. It’s best to cook the loaf in aluminium foil. This will aid the cooking process so that it cooks through evenly and stays moist. It also keeps it fresh for longer if you want to keep the leftovers for a quick meal later on, or a sandwich filling.
